Favorite Banana Bread recipe on the Schooner Alcyone

Whenever we leaving in the morning for a trip I always
try to have a banana bread freshly baked;
this makes the boat smell inviting when people arrive,
and it also gives people a chance to get something in their
stomachs in case they haven't had a chance to eat.

Banana Bread
3 cups white flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon

1 1/2 cups mashed bananas ( 3 large bananas)
4 tablespoons orange juice (the juice or 1/2 an orange)
Zest orange rind

1 cup soft butter
1cup brown sugar
1/2 cup white sugar
4 eggs
2 teaspoons vanilla

Preheat oven to 350 degrees.
Sift (mix) flour, soda, baking powder, salt, and cinnamon in bowl.
In an other bowl mix mashed bananas, orange juice, and zest.
In a large bowl cream butter and sugars, add eggs and vanilla.
Alternately add the flour and banana mix to the creamed butter mix.

Bake in two greased and floured loaf pans or a Bundt pan for an
hour or untill a tooth pick comes out clean.

I always use a Bundt pan because the diesel stove has the heat source
on one sideand and it is hard to get the middle to get done.
